Homemade Cappuccino
گھر کا کیپوچینو
A cappuccino is strong coffee topped with hot milk and a thick cap of milk foam, roughly a third of each. Cafés use an machine with a steam wand, but you can get very close at home with strong coffee and milk shaken in a jar. The trick is heating the milk until it steams but does not boil, then shaking it hard so it doubles in volume. It is a good cup for a slow breakfast or a mid-afternoon break.

Method
Tap a step when it is done.
Bring the water to a boil in a small . If you are using a , brew 2 strong shots instead and skip the next step.
Take it off the heat, stir in the instant coffee and the sugar until fully dissolved, and divide this strong coffee between two cups.
Rinse the patila, add the milk and heat it over medium heat until it is steaming and tiny bubbles form at the edge, about 3–4 minutes. Do not let it boil.
Pour the hot milk into a heatproof jar, filling it no more than halfway. Close the lid tightly, hold it with a towel and shake hard for 30–45 seconds until the milk roughly doubles.
Let the jar stand for 30 seconds and tap it on the counter a couple of times. The big bubbles burst and the foam turns thick and glossy.
Holding the foam back with a spoon, pour the hot milk into the coffee, then spoon a thick layer of foam on top. Dust with cocoa or cinnamon and serve.
Kitchen notes
Milk that has boiled will not hold foam well. Take it off as soon as it steams, around 60–65°C, hot to touch but not scalding.
No jar? Pump the hot milk in a French press 15–20 times, or whisk it fast in the patila, tilted, for a minute. All three work.
Never fill the jar more than halfway, and keep a hand firmly on the lid. Hot milk expands as you shake it.
A café classic, made at home
The cappuccino comes from Italy, where it is a morning drink, rarely ordered after lunch. In Pakistan it has become the everyday order at coffee shops in Lahore, Karachi and Islamabad, at any hour. A café cup is built on espresso and milk steamed with a machine, but the two things that matter most, strong coffee and a lot of fine foam, are easy to make in an ordinary kitchen.
Getting good foam without a machine
Milk foams because its proteins wrap around air bubbles and hold them in place. Heat helps the foam become soft and silky, but boiling changes those proteins and the bubbles collapse, so the milk should only be steaming, around 60–65°C. At that point shaking it in a closed jar forces in enough air to roughly double its volume.
Resting the jar for half a minute and tapping it lets the large, loose bubbles rise and burst. What is left is a thick, smooth foam that sits on the coffee instead of sliding off. Pour the liquid milk in first, then spoon the foam on top, so each cup gets coffee, milk and a proper cap.
For the coffee, a gives the closest taste to espresso. Instant coffee dissolved in a small amount of water is the easiest option and still makes a satisfying cup as long as it is strong.
Variations
- Flavoured: add a few drops of vanilla or a pinch of cardamom to the milk before heating.
- Dry cappuccino: use mostly foam and very little liquid milk for a stronger cup.
- Iced: pour strong coffee over ice and cold milk, then top with foam shaken from cold milk.
Serving
Warm the cups first with a splash of hot water so the drink stays hot longer. Serve straight away while the foam is still high, with biscuits, a croissant or a slice of cake.
Questions people ask
What is the difference between a cappuccino and a latte?
A cappuccino has less milk and a thick layer of foam, so it tastes stronger. A latte has more hot milk and only a thin layer of foam, so it is softer and creamier.
Can I use low-fat milk?
Yes. Low-fat milk actually makes a stiffer, bigger foam, though it tastes less creamy. Full-fat milk gives a silkier, richer cap.
How strong should the coffee be?
Strong enough to taste through the milk: about 2 teaspoons of instant coffee in 60 ml of water per cup, or a full moka pot shot. Weak coffee gives a milky, flat cappuccino.
