Pakistani Rice Recipes: Biryani, Pulao & More

Pakistani rice dishes explained: chicken and Sindhi biryani, yakhni and Kabuli pulao, tahari, khichdi and zeera rice, with how to choose basmati and cook it so every grain stays separate.

Biryani and pulao are not the same dish

People use the words loosely, but the methods are different. In a pulao, the rice cooks in a flavoured stock, the , and absorbs all of it; the meat and rice share one pot from the start. In a biryani, the rice is boiled separately in plenty of salted water until it’s three-quarters done, drained, and then layered over a fully cooked, spicy masala before a final . Pulao is gentle and fragrant; biryani is bold, layered and colourful.

Choosing and preparing basmati

Pakistan grows some of the world’s best basmati, and long, aged grains make a real difference here. Older rice cooks drier and fluffier; new-crop rice tends to stick. Whatever you buy, three habits matter more than the brand: wash the rice until the water runs nearly clear, soak it for 30 minutes so the grains lengthen instead of breaking, and don’t stir once the water has been absorbed.

The regional rice dishes

Sindhi biryani adds potatoes, dried plums and a heavy hand of green chilies, and it’s tangy and hot. Kabuli pulao came to Peshawar and Quetta from Afghanistan, with caramelised carrots and raisins on top. Tahari, popular in Karachi homes, is a quick yellow rice with potatoes, cheap enough for any weeknight. And khichdi, soft rice cooked with moong daal, is what mothers make for anyone who’s unwell.

Getting dum right

Most recipes here finish with dum: the pot sealed tightly and left on the lowest possible heat so the top layer steams through. If your stove can’t go low enough, set the pot on a over the flame. That spreads the heat and stops the bottom from scorching. Don’t open the lid to check; give it the full time, turn off the heat, and wait five more minutes before serving.
