Beef Tikka Boti
بیف تکہ بوٹی
Tikka boti is the everyday hero of Pakistani BBQ: chunky cubes of beef, deep red from chili and charred at the edges, chewed slowly with naan and onions. It's simpler than Bihari boti, with no fried onion and no folding into ribbons, just good cubes of meat, a strong marinade and enough time for both to get to know each other.

Trim any sinew from the beef and cut it into even 3 cm cubes. Even pieces cook evenly; odd sizes leave some cubes raw and others dry.
Mix all the remaining ingredients except the chaat masala into a thick marinade. Coat the beef well, cover and refrigerate for 8–12 hours.
Light the coals and let them burn down to a grey ash. Thread the beef onto skewers, 5–6 pieces each, with small gaps between them.
Grill over hot coals for 12–15 minutes, turning every 3 minutes, until well charred on the outside and just cooked through.
For extra smokiness, give the boti a 5-minute in a covered pot.
Sprinkle with chaat masala and serve with naan, onion rings, lemon and green chutney.
Kitchen notes
Undercut (tenderloin) gives the softest boti. Cheaper cuts work but need the full 12 hours in the marinade.
Pan method: cook the marinated beef in a covered heavy pan on medium heat for 15 minutes, then uncover and fry until the liquid dries and the edges brown.
The BBQ every street knows
From Lahore’s food streets to small-town roadside grills, tikka boti is the dish you smell before you see. Vendors line up skewers of red-marinated beef over long troughs of charcoal, fan the coals by hand and sell the boti by the plate with naan and onions. It’s honest food: good meat, a simple marinade and the right fire.
Balancing papaya and time
Beef needs help to stay tender on the grill, and raw papaya provides it. A tablespoon and a half for a kilo of meat, marinated overnight, is the right balance. Leave it much longer, or add more papaya, and the surface of the meat turns soft and grainy. If you’re short of time, four hours will do, but the boti will be chewier.
Fire management
Tikka boti wants hot coals, hotter than chicken, so the outside chars quickly while the inside stays juicy. Keep a cooler patch on the grill to move skewers to if fat drips and flares up. Turning every three minutes gives each side a chance to colour without burning.
Serving
Serve tikka boti sprinkled with , with naan or paratha, raw onion rings, lemon and green chutney. A kheera raita on the side cools things down.
Questions people ask
Why is my tikka boti tough?
Usually the cut was too lean or tough, the marinade was too short, or the boti was overcooked. Use undercut or sirloin, marinate overnight, and take it off the heat as soon as it's done.
Can I use mutton?
Yes. Boneless mutton from the leg makes excellent tikka boti. Use the same marinade and grill for slightly less time, 10–12 minutes.
How is this different from Bihari boti?
Bihari boti uses thin, pounded strips with ground fried onion and mustard oil, which makes it softer and sweeter. Tikka boti uses chunky cubes and a sharper, simpler marinade.
