Suji Halwa
سوجی کا حلوہ
Suji halwa is the sweet half of the Sunday halwa puri breakfast, and the same halwa is made for niyaz, for guests and whenever there is good news in the house. It is only , , sugar and water, so everything depends on one thing: roasting the semolina slowly over low heat until it smells nutty and turns golden. Pouring in a hot cardamom then makes it swell into a soft, glossy halwa that leaves the sides of the pan.

Method
Tap a step when it is done.
Make the first. Put the water, sugar and 3 of the cardamom pods in a and bring to a boil, stirring until the sugar dissolves. Add the food colour if using, then keep it hot on the lowest heat.
Heat the ghee in a heavy over low heat and add the remaining cardamom pods. Let them sizzle for 30 seconds until fragrant.
Add the semolina and roast it on low heat, stirring constantly, for 12–15 minutes. It is ready when it turns an even golden-brown, smells like toasted biscuits and the ghee starts bubbling up through it.
Stir in half the almonds and pistachios. Stand back and slowly pour the hot syrup into the semolina while stirring with a long spoon. It will hiss and splutter hard for a few seconds.
Keep stirring on low heat for 5–7 minutes. The semolina swells and the halwa thickens until it gathers into one soft mass, leaves the sides of the karahi and the ghee shines at the edges.
Cover and leave on the lowest heat for 3–5 minutes so the grains finish softening in the steam.
Turn off the heat. Serve warm, topped with the remaining nuts, with hot puris and chana or on its own.
Kitchen notes
Do not rush the roasting on high heat. The outside of each grain browns while the inside stays raw, and the halwa tastes floury and turns gluey.
The syrup must be hot when it goes in. Cold syrup makes the semolina seize into lumps.
The halwa firms up as it cools. Take it off the heat while it is still soft and spoonable.
The sweet side of halwa puri
In Pakistan, a weekend breakfast of halwa puri means three things on one plate: puffed fried puris, spiced chickpeas and a mound of soft suji halwa. Halwa shops in Lahore and Karachi cook it in huge shallow karahis from early morning, and many homes make a smaller batch for Sunday breakfast. The same halwa is also cooked on its own for niyaz, for Shab-e-Barat and to share with neighbours when there is something to celebrate.
The roast decides the taste
Suji halwa has very few ingredients, so the flavour comes almost entirely from how the semolina is roasted. Low heat and constant stirring let each grain cook through in the ghee and brown evenly, which gives the halwa its nutty, biscuit-like smell. Pale semolina gives a bland, pasty halwa; scorched semolina tastes bitter. The second key point is the syrup: it has to be hot so the grains absorb it at once and swell evenly. A ratio of one part semolina, one part sugar and three parts water gives the soft, slightly loose halwa sold with puris. For a firmer halwa that can be cut into pieces, reduce the water to two and a half cups.
Variations
- Halwa shop colour: a pinch of yellow or orange food colour in the syrup gives the bright colour of bazaar halwa.
- Kewra or saffron: a few drops of or a pinch of saffron in the syrup make it more festive.
- Milk halwa: replace one cup of the water with milk for a richer, paler halwa.
- Coconut and raisins: stir in desiccated coconut and raisins along with the nuts.
Storing and serving
Suji halwa is best eaten warm, within an hour of making. It keeps in a covered container in the fridge for up to five days. Reheat it gently with a splash of water or milk so it softens again, and serve with fresh puris, chana and a cup of doodh patti.
Questions people ask
Why did my suji halwa turn out lumpy?
Either the syrup was added cold or it was poured in all at once without stirring. Pour hot syrup in a slow stream and stir the whole time. Small lumps can be pressed out against the side of the karahi with the back of the spoon.
Can I use less ghee?
You can go down to half a cup. The halwa will be a little drier and less glossy, and you must stir more carefully while roasting so the semolina does not catch.
How do I reheat leftover halwa?
Warm it in a pan over low heat with a tablespoon or two of water or milk, stirring until it softens again. It keeps for 4–5 days in the fridge.
