Kefir (Homemade Fermented Milk Drink)
کیفیر (گھر کا خمیری دودھ کا مشروب)
Kefir is milk fermented with "kefir grains", small white clusters of friendly bacteria and yeasts that look a little like cauliflower florets. It comes from the Caucasus but is everywhere in Turkey, sold in bottles next to ayran. It's thinner than yogurt, tangy, and slightly fizzy. Once you have the grains, a fresh batch takes just one day and almost no work.

Method
Tap a step when it is done.
Put the kefir grains in a clean glass jar and pour in the cool milk. Stir with a plastic or wooden spoon.
Cover with a cloth and leave at room temperature, away from sunlight, for 18–24 hours, until it's slightly thick and smells pleasantly sour.
Strain through a plastic sieve into a jug. Put the grains straight into fresh milk to start the next batch.
Chill and serve cold, plain or with a little honey or salt.
Kitchen notes
Kefir grains are alive. Keep them in milk; for a break, store them in fresh milk in the fridge for up to a week.
Because kefir contains yeasts, it has a trace of alcohol from fermentation, usually well under 1%. It rises if kefir is fermented for a long time or kept tightly closed. If you avoid any trace, make plain yogurt or ayran instead.
Avoid metal sieves and bowls for long contact; plastic, glass or wood is kinder to the grains.
From the Caucasus to Turkey
Kefir has been made for generations in the mountains of the Caucasus, where it was fermented in leather bags. Today it’s a supermarket staple in Turkey, drunk at breakfast, after meals or as a light snack, plain or with fruit.
How kefir grains work
The grains are a living mix of bacteria and yeasts held together in a soft, jelly-like body. When they sit in milk, they ferment its natural sugar, making it tangy and slightly thick. The bacteria give the sourness; the yeasts give a gentle fizz. The grains grow slowly, so after a few weeks you’ll have extra to share or eat.
About fermentation
Because yeasts are part of kefir, a small amount of alcohol forms as it ferments. For normal home kefir, strained after a day and kept in the fridge, the amount is very small. Long fermentation, warm rooms and sealing the jar tightly for a second ferment all increase it. We’ve kept this recipe to a single short ferment.
Serving
Drink it cold, plain or with a little honey, or blend it with banana or strawberries for a smoothie. Savoury drinkers can add a pinch of salt and dried mint, like a tangy ayran.
Questions people ask
Where can I get kefir grains in Pakistan?
They're shared from person to person, because grains multiply. Look for local home-fermentation groups or online sellers, and choose milk kefir grains, not water kefir.
Can I make it with yogurt instead?
Yogurt gives a different drink. Thinned yogurt with salt is ayran; kefir needs the grains.
Why is my kefir very sour or separated?
It fermented too long or in a warm room. Strain sooner, or use more milk for the same grains.
