Spanish Latte
اسپینش لاٹے
A Spanish latte is a latte sweetened with condensed milk instead of sugar, which gives it a rounder, almost caramel-like sweetness and a creamier body. It became a coffee shop favourite across the Gulf and Pakistan, and it is very easy to copy at home. Condensed milk goes in the cup first, then hot frothed milk, and strong coffee is poured gently on top so it sits in a dark layer. Stir it all together just before drinking.

Method
Tap a step when it is done.
Heat the milk in a over medium heat until it steams and small bubbles appear around the edge, about 3–4 minutes. Do not let it boil.
Turn off the heat, tilt the pan and whisk the milk fast for about a minute until a light layer of foam forms on top.
Dissolve the instant coffee in the hot water to make a small amount of very strong coffee, or brew 2 shots in a .
Spoon 2 tablespoons of condensed milk into the bottom of each heatproof glass or cup.
Slowly pour the hot milk over the condensed milk, then spoon the foam on top.
Pour the coffee in very gently over the back of a spoon so it settles as a dark layer under the foam. Serve and stir well before drinking.
Kitchen notes
Condensed milk is very sweet. Start with 1½ tablespoons per cup if you take little sugar in coffee, and add more after tasting.
Use thick-walled or heatproof glasses. Thin glass can crack when hot milk is poured in; warm it with hot tap water first to be safe.
Stir thoroughly from the bottom before drinking. The condensed milk sinks, and the last sip will be pure syrup otherwise.
A sweet coffee shop favourite
The Spanish latte borrows from Spain’s love of coffee with milk and from the habit, common in Spain, Portugal and Southeast Asia, of sweetening coffee with condensed milk. The drink sold under this name, though, became famous through coffee chains in the Gulf, and from there it reached Pakistan, where it is now on almost every café menu. It suits local taste well: sweet, milky and smooth, much like a café version of doodh patti.
What condensed milk does
Sweetened condensed milk is milk cooked down until most of its water is gone, with sugar added. That slow cooking gives it a light caramel flavour that ordinary sugar cannot match, and the concentrated milk solids make the drink taste richer without adding cream. Because it is thick and heavy, it stays at the bottom of the cup when hot milk is poured slowly over it.
The coffee goes in last and is poured over the back of a spoon so it spreads out and floats in a layer beneath the foam. The result looks like a café drink: pale sweet base, milk, a dark coffee band and white foam. Strong coffee is essential, as the condensed milk is sweet enough to hide weak coffee completely.
Variations
- Iced Spanish latte: stir the condensed milk into cold milk, pour over ice and top with coffee.
- Cardamom Spanish latte: add 2 crushed cardamom pods to the milk while it heats, then strain.
- Stronger: use 3 teaspoons of instant coffee per cup, or a double moka pot shot.
- Less sweet: replace half the condensed milk with plain milk powder for creaminess with less sugar.
Serving and storing
Serve in clear glasses to show off the layers, with a spoon for stirring. Opened condensed milk keeps for about two weeks in a covered jar in the fridge; let it come to room temperature first, or warm the jar slightly, so it pours easily.
Questions people ask
Is a Spanish latte actually from Spain?
Not quite. Spain has café bombón, espresso layered over condensed milk, but the milky latte sold under this name became popular through coffee shops in the Middle East and Asia.
Can I make it iced?
Yes. Stir the condensed milk into cold milk, pour over a glass full of ice and top with the coffee. Iced Spanish latte belongs with the cold coffees.
Can I use evaporated milk instead?
Evaporated milk is unsweetened, so you would need to add sugar. It gives a creamy cup but misses the caramel sweetness that makes a Spanish latte.
