Methi Thepla (Gujarati Fenugreek Flatbread)
میتھی تھیپلا (گجرات کی میتھی والی روٹی)
If you've ever met a Gujarati family on a train, you've probably been offered a thepla. These soft, spiced flatbreads made with fresh fenugreek (methi), yogurt and a little keep for several days without a fridge, so they go everywhere: on journeys, to school and abroad. They're thinner and softer than a paratha, and they're delicious plain, with pickle, yogurt or a cup of tea.

Method
Tap a step when it is done.
Mix all the ingredients except the water. Add water little by little and knead into a soft, smooth dough. Rest for 15 minutes.
Divide into 10–12 balls and roll each thinly into a 15–18 cm round, dusting with a little flour.
Cook on a medium-hot tawa for 1 minute until small bubbles appear. Flip, drizzle a little oil and cook until golden spots appear, then flip again and press gently with a spatula until both sides are spotted.
Stack them in a cloth-lined box to stay soft. Serve warm or at room temperature with pickle, yogurt or chai.
Kitchen notes
No fresh methi? Use 2 tbsp kasuri methi, or swap in spinach, dill or grated bottle gourd.
Theplas for travel keep 3–4 days at room temperature; cook them a little longer so they're drier.
Yogurt keeps them soft; don't leave it out.
Travel food from Gujarat
Gujaratis are known as a community of traders and travellers, and thepla is their famous travel food. Because the dough contains oil and yogurt and the bread is cooked well, theplas stay soft and safe to eat for days. Gujarati families pack them for pilgrimages, long train rides and even flights abroad.
Greens in the dough
Fresh fenugreek gives thepla a gentle bitterness and lovely aroma. The spices are mixed straight into the dough, along with a little sugar to balance the methi, which is typical of Gujarati cooking.
Soft, not crisp
Theplas should be thin, soft and lightly spotted, not crisp. Use only a little oil and keep them wrapped in a cloth after cooking to hold in the steam.
Serving
Serve with mango pickle, plain yogurt, sweet mango chhunda or a cup of masala chai. They’re also great rolled around a spoon of potato sabzi for a quick lunch, and they pair well with dhokla.
