Coleslaw (Creamy Fast-Food Style)

کول سلا (کریمی فاسٹ فوڈ اسٹائل)

A spoon of cold coleslaw is the perfect partner to hot fried chicken: crunchy, creamy and a little sweet and sour. The secret to shop-style slaw that stays crisp for hours is to salt the shredded cabbage for 20 minutes, squeeze out the water, and only then add the dressing. It takes 15 minutes, costs very little and adds a portion of vegetables to a fast-food meal.

Method

Tap a step when it is done.

  1. Toss the shredded cabbage with the salt in a colander and leave for 20 minutes. It will soften slightly and release water.

  2. Rinse the cabbage quickly under cold water, then squeeze it hard by the handful (or spin it in a salad spinner) until as dry as possible. This is what keeps the slaw crunchy and the dressing thick.

  3. Whisk the mayonnaise, milk, vinegar, sugar and pepper in a large bowl until smooth.

  4. Add the cabbage, carrot and onion and mix well. Chill for at least 30 minutes before serving so the flavours come together.

Kitchen notes

Shred the cabbage as finely as you can. A sharp knife works; the fine slicing blade of a food processor is quickest.

Add a handful of shredded red cabbage for colour, or a little grated apple for a fruity, child-friendly version.

Keeps 2 days in the fridge. Keep it cold; mayonnaise salads shouldn't sit in summer heat.

Why fast food comes with slaw

Coleslaw came to Pakistan with the fried chicken chains, and it stayed because it works: cold, crunchy and slightly sour next to hot, rich chicken. It refreshes the mouth the way kachumber salad does next to karahi, and it’s the easiest way to get a few vegetables onto a burger-night plate.

The salting trick

Cabbage is about 90% water. If you dress it straight away, the salt and sugar in the dressing draw that water out and you end up with a soupy bowl in an hour. Salting the shredded cabbage first, then rinsing and squeezing it dry, removes most of that water in advance. The cabbage stays crisp and the dressing stays thick and creamy, even the next day.

Balancing the dressing

Shop slaw is fairly sweet. This version uses just enough sugar to balance the vinegar. Taste before serving and adjust: a little more vinegar if it’s flat, a pinch more sugar if it’s sharp.

Serving

Serve with crispy fried chicken, a zinger burger or chicken nuggets. It’s also good inside a club sandwich, and a small pot travels well in a lunch box if there’s an ice pack.

Questions people ask

Why is my coleslaw watery?

Cabbage is mostly water and the salt in the dressing pulls it out. Salting and squeezing the cabbage first removes that water before it can thin the dressing.

Can I make it without mayonnaise?

Yes. Use thick strained yogurt with a teaspoon of honey and a squeeze of lemon. It's lighter and tangier.
