Fruit Trifle
فروٹ ٹرائفل
Trifle arrived with the British and became completely Pakistani along the way: no sherry, plenty of custard, bright jelly and a tin of fruit cocktail. It is layered in a glass dish so every layer shows, and it is a favourite for dawats, birthdays and Eid because it is made hours ahead. This version keeps the layers distinct by soaking the cake lightly and pouring the custard only once it has cooled to warm.

Method
Tap a step when it is done.
Dissolve each jelly packet in 1 cup of hot water in a separate flat dish. Cool, then refrigerate for about 2 hours until firm, and cut into small cubes.
Bring 3½ cups of the milk to a boil with the sugar in a over medium heat. Whisk the custard powder into the remaining half cup of cold milk until smooth.
Pour the custard mixture into the boiling milk in a thin stream, stirring all the time. Cook for 3–4 minutes until thick enough to coat a spoon heavily; trifle custard should be thicker than pouring custard.
Turn off the heat and let the custard cool for about 20 minutes, stirring now and then, until it is just warm.
Line the bottom of a glass dish with the cake slices, pressing them close together. Spoon over 4–5 tablespoons of the fruit cocktail syrup, just enough to moisten the cake.
Scatter the drained fruit cocktail, apple, banana and half the jelly cubes evenly over the cake.
Pour the warm custard slowly over the fruit, covering it completely. Let it cool, then chill uncovered for 1 hour until set.
Whip the cold cream with the icing sugar until it holds soft peaks, about 2–3 minutes with a beater. Spread it over the set custard.
Decorate with the remaining jelly cubes and a little fruit, cover and chill for at least 2 more hours. Serve cold, scooping deep so each portion has every layer.
Kitchen notes
Moisten the cake, don't drench it. Too much syrup makes the bottom layer soggy and the custard sinks into it.
Pour the custard while it is warm but not hot. Hot custard melts the jelly; cold custard turns lumpy and won't spread.
Chill the cream, the bowl and the beaters before whipping. Warm cream will not thicken in a Pakistani summer.
From English pudding to dawat favourite
Trifle came to the subcontinent with the British, where it was a layered pudding of sherry-soaked sponge, fruit, custard and cream. Pakistani homes dropped the alcohol, used the syrup from a tin of fruit cocktail instead and added bright jelly, and the result became a fixture of birthday parties, dawats and Eid. A tall glass bowl showing off its stripes of cake, fruit, jelly, yellow custard and white cream is a familiar sight on desi dessert tables.
Keeping the layers neat
A good trifle has clear layers and holds together when spooned out. Three things make the difference. Use a day-old cake and only moisten it with syrup, so the base stays firm. Make the custard thicker than you would for drinking or pouring, using five tablespoons of custard powder to a litre of milk. And pour it while it is still warm, which lets it settle smoothly over the fruit without melting the jelly. Chilling the custard layer before adding the cream stops the cream from sinking.
Variations
- Strawberry trifle: use strawberry jelly, fresh strawberries and a strawberry-flavoured custard.
- Mango trifle: replace the fruit cocktail with diced mango in season.
- Nutty top: finish with chopped almonds and pistachios, or grated chocolate.
- Individual cups: layer the same components in small glasses for parties; they set faster and are easier to serve.
Make-ahead and serving
Trifle is best made the day before or at least four hours ahead, which gives it time to set. Keep it covered in the fridge and serve it cold, scooping straight down to the bottom of the dish.
Questions people ask
Can I use packaged cream instead of whipping cream?
Yes. Ordinary packaged cream won't whip into peaks, so fold it into the cooled custard instead, or spread it as a smooth top layer.
What cake works best?
A plain vanilla sponge or pound cake, a day old so it holds its shape. Cake rusks or sponge fingers also work.
How long does trifle keep?
Up to 2 days covered in the fridge. Add banana only if you are serving it the same day, as it browns.
